Auf einen Blick
From mandatory task to reliable routine
HACCP documentation is a legal requirement, not an option. Kibi Scada transforms it from a daily time drain into an automated routine—with measurable impacts on effort, safety, and audit readiness.

From Sensor to Audit-Ready PDF
Three steps to a fully compliant commercial kitchen – no binders, no clipboards, no data gaps between measurement rounds.
Connect sensors and devices
Wireless sensors, wired probes, or existing device interfaces continuously monitor temperatures—without interfering with the electrical system.
Automatically evaluate data
Kibi Scada checks measured values against thresholds, documents them seamlessly with timestamps, and alerts immediately in case of deviations.
Generate HACCP reports
Select report parameters, download as PDF, distribute to audit managers—all locations in one batch process.
Im Detail
What a modern HACCP solution needs to deliver
Capture, document, respond—the three pillars that make the crucial difference between mere compliance and truly lived hygiene safety.
Automatic Capture
Continuous temperature tracking instead of manual lists
Wireless sensors, wired probes, and connected devices continuously monitor temperatures—24/7, without human error. Plausibility checks filter out sensor outliers, while missing data triggers connection alarms.
- Configurable measurement intervals from minute-by-minute to hourly
- Support for all common sensor types and manufacturer devices
- Automatic plausibility checks and connection alerts
- Local buffering during internet outages – no data gaps
Tamper-proof logs
PDFs that pass every audit
Every measurement is stored with an immutable timestamp. The HACCP report generator creates PDF reports from any checklist for any time period—individually at the push of a button or via batch processing for multiple locations simultaneously.
- Daily, weekly, monthly, and annual reports as PDF and CSV
- Reports per checklist, location, or device group
- Six languages for international audits
- Automatic distribution to audit stakeholders
Checklists & Alerts
Digital manual routines, automatic deviations
Goods receipt inspections, cleaning checks, and visual inspections are managed via digital checklists—complete with photo capture and a template library. Core temperatures are recorded directly into the HACCP log using Bluetooth probe thermometers, including measurement value, photo, and timestamp. As soon as a sensor detects a threshold breach, the alert chain kicks off with dashboard notifications, emails, and phone escalation.
- Digital checklists with photos, comments, and templates
- Core temperature via Bluetooth probe thermometer with photo proof
- Set urgency, channels, and acknowledgment requirements per code
- Multi-level escalation chains with on-call rules

FAQ
Frequently Asked Questions About HACCP Documentation
What does HACCP-compliant mean?
HACCP (Hazard Analysis and Critical Control Points) is the foundation of food hygiene regulations. EU Regulation (EC) No. 852/2004 requires every food-related business to define, monitor, and document critical control points. Kibi Scada automatically records temperatures and process data, checks them against limit values, and generates audit-proof logs—exactly what is required during inspections.
How precisely and how often are measurements taken?
The sensors used measure with an accuracy of ±0.3 °C to ±0.5 °C—compliant with HACCP and EU regulations. Measurement intervals are fully configurable: by default every 10 to 15 minutes, for critical cold chains even every minute, and for less critical areas hourly.
Are temperature logs truly audit-proof?
Yes. Every measurement is given an immutable timestamp. Data is archived in German data centers for at least three years. The HACCP report generator creates PDFs that you can submit unchanged to food safety authorities and internal audits.
What reports does the HACCP module generate?
Daily, weekly, and monthly reports as PDF and CSV: temperature trends, limit breaches, alarm events, acknowledgments, and actions. Reports can be filtered by location, device group, or checklist and automatically sent to defined recipients.
What can digital HACCP checklists do?
Alongside automated sensors, there are tasks that can only be completed manually—such as goods receipt inspections, cleaning logs, or visual checks. Digital checklists in Kibi Scada replicate these routines, featuring photo capture, note fields, and a template library. Data is recorded directly on smartphones or tablets.
How secure is the alerting process when threshold values are exceeded?
As soon as a sensor exceeds a threshold, the predefined alert chain kicks in: dashboard, email, phone—depending on the code and level. If no one responds within the time limit, the alarm escalates to the next level. This way, anomalies become documented responses, not just silent data points.
How are manual core temperature measurements recorded?
With a paired Bluetooth probe thermometer (e.g., Thermapen), you measure the core temperature directly in the food. The value is transferred to the HACCP entry without manual input—along with a photo and an unalterable timestamp. This ensures the measurement is documented in a way that’s audit-proof, instead of ending up on a paper log.
Can existing refrigeration units be retrofitted?
Yes. Wireless sensors can be installed on any refrigeration or freezer unit in just a few minutes—regardless of manufacturer and without interfering with the device’s electrical system. Units with an interface (OPC UA, Modbus, MQTT, LoRaWAN) are connected directly.
What about languages for international locations?
The interface and reports are available in German, English, Spanish, French, Italian, and Slovakian—selectable per user and per report. Essential for catering companies, hospital networks, and retail chains with multilingual teams.
