The challenge

Strict regulations, high responsibility, complex processes

Hospital kitchens feed hundreds to thousands of immunocompromised patients every day. At the same time, they must meet the strictest hygiene standards and provide complete documentation for every inspection.

01

Ensuring patient safety during temperature deviations

Immunocompromised patients are particularly vulnerable. Even minor deviations in refrigeration or warming zones can pose a serious risk.

02

Incomplete documentation during audits

Paper-based temperature logs are prone to errors in daily operations and are often incomplete or difficult to locate during inspections.

03

Food distribution carts without continuous monitoring

Temperatures drop unnoticed on the way from the kitchen to the ward. Only at the bedside does it become clear that meals are no longer within the target range.

The solution

Automated monitoring for the entire hospital kitchen

Kibi Scada keeps an eye on all temperature-critical points in your hospital kitchen 24/7—automatically, seamlessly, and HACCP-compliant. From goods receipt to the patient’s bedside.

Food Trolley Monitoring

Continuous monitoring of hot and cold compartments throughout the entire transport route. Immediate alerts if the minimum temperature is not met—before the vehicle even reaches the station.

Document Cook & Chill processes

Seamless documentation of the entire cook-and-chill process: cooking, rapid chilling below 3 °C, and regeneration. Every phase verifiable with timestamps and temperature curves.

GDPR-compliant documentation

Tamper-proof temperature logs with immutable timestamps. During health authority inspections, all records are available as PDFs within minutes.

Frequently Asked Questions About Temperature Monitoring in Hospital Kitchens

Does Kibi Scada meet HACCP requirements in hospital kitchens?

Yes, Kibi Scada generates tamper-proof temperature logs in compliance with EU Regulation (EC) No. 852/2004 and the guidelines of the German Federal Institute for Risk Assessment (BfR). All measured values are stored with immutable timestamps. The documentation meets the specific requirements of hospital hygiene under the German Infection Protection Act (IfSG) and the recommendations of the Robert Koch Institute (RKI).

How are meal distribution carts tracked via monitoring?

Kibi Scada monitors meal distribution carts via integrated or retrofitted wireless sensors. Temperatures in hot and cold compartments are measured continuously and transmitted to the dashboard. If the temperature falls below the minimum of 65 °C (hot) or exceeds 7 °C (cold), an alarm is triggered immediately—before the cart even reaches the station.

Can Kibi Scada document cook-and-chill processes?

Yes, Kibi Scada documents the entire cook-and-chill process seamlessly: from cooking to rapid chilling (core temperature below 3 °C in a maximum of 90 minutes) to regeneration. Every phase is logged with timestamps and temperature profiles. Deviations from the defined process immediately trigger alarms.

How is documentation provided during health authority inspections?

All temperature logs are available at any time in the dashboard and can be exported as PDFs—filtered by period, device, or area. In the event of an inspection by the health authority, you can provide the requested documentation within minutes, instead of searching through paper files. Digital archiving is maintained for at least 3 years.

Can different diets and dietary preferences be accommodated?

Kibi Scada keeps track of temperature compliance regardless of the meal type. When combined with device management, you can assign food distribution trolleys to specific stations and ensure that temperature requirements for light meals, diabetic diets, or other special diets are met. The assignment is always traceable in the dashboard.

How does alerting work for temperature deviations?

When threshold values are exceeded, Kibi Scada triggers multi-level alarms: first via push notification and email to the responsible kitchen staff, then escalating to the kitchen management and, if necessary, to quality management. Alarms can also be forwarded to the in-house CAFM system. Response times and measures taken are documented.

Is integration with existing hospital IT systems possible?

Yes, Kibi Scada offers interfaces (REST-API, MQTT) for connecting to existing hospital IT systems. Data can be transferred to CAFM systems, quality management, or facility management. The connection is made via standardized protocols and does not require any intervention in existing systems.

What happens during a power outage at the station?

Kibi Scada’s wireless sensors are battery-powered and operate independently of the station’s power supply. If the connection to the gateway is interrupted, the sensors store the measured values locally and automatically transmit them once the connection is restored. Additionally, an alarm is triggered if a sensor stops sending data.
